Climate : Warm temperate, Mediterranean, and very
windy, Tavel is located in the Rhône Valley. Average
sunshine: 2,700 hours/year.
Natural vinification : Direct pressing. Fermentation
with indigenous yeasts.
A ged on fine lees in stainless steel vats, without
racking, with regular stirring to allow for slight
natural discoloration. Little or no addition,
depending on the vintage.
Bottling : Mid-February, to preserve the wine’s
freshness and energy as much as possible.
